Mïrum Sémillon 2021

The Mïrum Sémillon is the only wine in the Mïrum portfolio at the moment. It is the creation of Léze Herholdt, a female winemaker who became obsessed with the idea of making wine in France after watching the film, A Good Year, that plays off in the South of France. Her dream came true when she was working at Château Angélus in Bordeaux, St. Émilion after completing her degree in Oenology at the University of Stellenbosch. After further studies in Bordeaux, she worked as assistant sommelier at the restaurant, JAN in Nice and upon her return to South Africa at Creation Wines. Returning to winemaking, she started Mïrum Wines (Latin for ‘extraordinary’) amid the COVID-19 pandemic – something that must have been exceptionally challenging.


In the glass, this wine displays a bright golden-yellow colour. It is very aromatic and forthcoming on the nose with fresh asparagus, freshly cut grass, and citrus. It follows through with the typical Constantia-style asparagus, grass, lemon, quince and medium ripe apricots against a waxy mouthfeel. It has a long finish of fresh fruit and a hint of stone minerality.


This is a truly exceptional Sémillon, made in a very different and modern style. It should be served cold and could possibly be cellared for up to three to five years, however, I would recommend to drink it now. This wine will pair very well with fresh oysters, maki rolls or grilled pork chops.
