The PhD Pét-Nat is one of a handful of wines that form part of the Vino pH collection. The ‘p’ and ‘H’ indicates the two driving ladies behind these wines, Pauline Roux and Hanneke Krüger. For the Pét-Nat, the ‘D’ was added as it is the only consonant in the name of the winemaker, Adi Badenhorst (from AA Badenhorst wines). As the name suggests, this wine was made by means of the Méthode Ancestrale which means that fermentation starts without the addition of yeast. The wines were riddled for about 5 months and then degorged.
In the glass, this wine has a rose gold to orange colour with small bubbles. It present notes of apricot, grapefruit and brioche with yeast on the nose. It has a soft entry with foamy bubbles but soon presents a bolder wine with complex notes of canned apricots, ripe apricots, lemon, honeycomb, grapefruit, yeast and ripe yellow pears. It has a long finish with ripe fruit flavours lingering for long. Although this wine is quite unusual at first, it was a popular one to start a recent tasting and was appreciated for its mostly natural process and unpretentious presentation.
Although this wine can be used in many ways and for different occasions, I would prefer to use it at the end of a meal with a dried fruit and cheese platter. It should be served chilled. Only 317 cases of this wine have been produced.
