The Graham Beck Ultra Brut, previously known as Brut Zero (and not to be confused with the Extra Brut) is an exceptional expression of Chardonnay (67%) and Pinot Noir (33%) in its purest form, without the addition of any sugar. Although it is dry, its residual sugar content of 2.4g/l makes it very approachable and not as dry as you might think – it is therefore not something for only selected bubbly drinkers, everyone can try this with confidence. The grapes for this wine, harvested in 2017, were fermented in stainless steel tanks and then left on the lees for secondary fermentation. The bottles were disgorged in 2022, after spending time on the lees for 62 months, contributing to a smooth and creamy mouthfeel.
In the glass, this wine has a pale green-yellow colour with lively bubbles. It offers fresh lemon zest, bruised apple and brioche on the nose. It delivers well on the palate with lemon, lime, white flowers, white pear and brioche, and a hint of wild white flowers. The acidity is high and the mousse is refined, creating a creamy mouthfeel throughout with a zesty acidity that balances the wine. It remains fresh throughout and has a moderately long, citrus finish.
This wine should be served chilled well. It will work well as a welcome drink, but will also accompany seafood or line fish well. It is ready to drink now or within the next five years. This is a must-try for all bubbly lovers!
